To put it simply: My lunch today was epic. I was browsing healthy recipes last night on Pinterest and I came across this beautiful looking recipe posted by The Global Girl for a raw falafel wrap in collard greens. I had MOST of the ingredients already in my fridge so I was super excited to try it out for lunch today! I am so glad I did :) I added some cumin, a red bell pepper & a green onion to the falafel and used 1/2 of a sprouted Ezekial pocket bread instead of wrapping it in collard greens. I also added raw zucchini to the sandwich. I love that I didn't have to fry the falafel patties in a bunch of oil to get the same flavor! All in all, it was a colorful, beautiful sandwich that was BURSTING with flavor and tons of nutrients. Give it a try!
